I am a beginner in Poker and it seems to me, that if you have an edge over your opponent, you should be playing HU to play more hands and extract more value.
However, I see many more cash games tables with 6 max or full ring in sites like Pokerstar, anyone knows why is this?
Why would you want to play fewer hands if you have an edge, and if you don't have one, why play at all?

In a heads-up game, the most you can get is one 100 BB stack, unless you and your opponent are both deeper than that.
In a six-max game, or full-ring game, it is possible to get pots much larger than that.
Each format and stack depth has different opening range requirements, and it takes time to learn them all.
At PokerStrategy.com we suggest players start at small stakes, full-ring, since you have lots of time between hands to learn and observe.
Yes, some people start at 6-max, but I've not heard of anyone starting out at HU poker. For one thing, the people playing HU are generally fairly good, so it is unlikely that a random player would have and edge.
OTOH, if you do have an edge HU, by all means get all the value you can!
Be sure to check out the free money offers and bonus offers.
Read the instructions carefully -- they usually apply to rooms where you don't already have an account.
Do you just play Hold'em or do you play any other variants?
