I used to have trouble making a decent omelette at home, but today, I tried it again, after reading through some instructions.
It may seem obvious to beat the eggs first, but I think I have neglected that step a few times in the past, before putting the eggs in the pan. This looks much better:

I cooked it using what I heard was the "American" method, which is to keep tilting the pan while lifting the omelette, to make the runny egg flow to the bottom on the pan.

Flipping, however, did not go so well...

I guess that takes practice. I added some cheese and ham, to keep it simple, and folded it over.

Served with some bacon. I think it came out pretty well after all.

On the inside:

I've had most success using a pan small enough that the beaten eggs reach the edges.
Did you add milk to the eggs before beating them? I've made omelettes both with and without milk. It has been a long, long time since I made one though.
Using butter rather than vegetable oil or margarine also seemed to work well. Bacon fat also produced good results.
Oh yeah — not too much filling.seemed to increase flipping success.
Too bad I just had lunch, or I'd try one.

Like that crêpes pan I used before. It didn't even occur to me to use it for my omelette attempts too.

No milk, only three eggs. But I did use unsalted butter to grease the pan.
I didn't add the fillings until after I had flipped the omelette either. They were kind of an afterthought anyway, apart from shredded cheese, which was mussgo.
I wonder if I would have gotten any better flipping results if i had tried that advanced method of flicking the pan up and trying to catch the omelette with the other side at the bottom. Like in that classic comedy trope where the omelette/pancake gets stuck to the ceiling. It seemed like the omelette had set pretty well, but it fell apart when I tried picking it up with a spatula.

I think that they take a lot longer to cook on the ceiling
