Lemon, "how to do population tendencies analysis" and adapt yourself to that particular field?

For the past year or so, I've been playing micro FR NL on 3 different sites and I've this feeling that the field on which site has different tendencies.

On one of the sites knowing that field better would be a lot valuable because the tables/players are anonymous and fishes lose their stacks and get busted very quickly, so I don't have many opportunities to gather lots of data about a particular villain.

I basically have to assume/guess a bunch of things based on small sample sizes or reads and go from there (I guess it's something similar to what happens to a hero starting a session at zoom tables).
