Should I have folded or called here on the flop? In general is this playable on a flop like this when there are all-ins?

The important factor here is what is UTG stats? What you are hoping for is that nobody shows up with A2 so if UTG is loose with his opening requirements you shouldn't be fearing A2 that often. So long as you can rule him being tight then your equity is going to be okay. Likewise if you were 100 bets deep, a fold is a lot easier to make but since you started the hand with 60 bets it's a lot closer to stacking off.

Obviously I would prefer you to have a hand like A56x than A57x, the extra equity of having a better low if an ace or 5 hits helps you out slightly. Likewise the backdoor nut flush draw gives you another 3% equity.

Once you call on the flop you have to stack off (I like the call here rather than a checkraise shove because you can probably get off the hand on the turn if a 5 does hit, plus you want more opponents in the hand when you have nothing but a low draw).

6max PLO8 you can't nut peddle as you wont flop a nut low draw enough of the time, and neither will your opponents, so 2nd nut low with your double belly buster straight draw and backdoor low draw is just enough, given the money already in the pot and that you only started the hand with 60 bets.
