Imo his cbet range crushes you. If he is cbetting wider HU doesnt mean he cbets wide 3way with a fish.
Your hand is vulnerable and you have no sample for his turn frequency, and flop is small sample.
Also his 3bet bu vs sb stat is missleading because he will flat preflop more often.
So imo stats are here not relevant much but only player category.

I think you can simply defend here strong hands and draws, he is not going to exploit you with bluffs because fish will help you in defending.

Hmm hard to say for sure. Betting 100% on F and T is a strong indication that this guy is not very good and is not taking into consideration the presence of the fish.

If the fish folds and you are left to act behind him, I would call here. Given that you are sandwiched between both players, I think you should fold here.
