I 3bet 4-5x depo vs this maniac, as played shove flop in this board with many scary card, he can call 7x,9x, top and middle pair, Fd, qj

Pre-flop is fine. 3x could be fine, but if you make it more he will fold to much.
Flop you can call or shove, but I like the call as well to keep his range as wide as possible.
Turn is tricky, but if he's a maniac you can still go broke here.
