Given UTG's minraise and lack of hands that indicate he's a fish, it is very likely he will just call and we will see a flop at least 3-way, so my implied pot odds are looking very good here since I'm paying a little less than 1/14 of my stack to flop a set 1/8 times versus at least 2 players (so my chances of getting paid greatly increase) AND there is going to be a big pot on the flop which makes my job to get it all-in with my set a lot easier than if the pot was something like 7-8 BB, so this is a standard calling spot for me.

I disagree. Assume every player behind you will 4-bet a 1.5% range. and the openraiser will 4 bet also with a 1.5% range opening around 10% of hands in the first place.
you are not getting 4 bet in 0.985^6*0.85 = 0.77 = 77%
if you do flop a set you will usually play for a 210bb pot - assuming you always get all the money in. your equity will be somewhere around 80%. so 68bb win on average ( 210*0.8- 100)
ev = 0.23*(-7) + 0.77*( 0.875*(-7) + 0.125*68) = 0.22
so now u gonna be paying rake too 4-8bb from the 210bb pot.
if the 3 bet is any bigger you go even deeper into the red.
the call might be accetable when less players are behind you and/or you get better odds (BU,BB) or someone alreay did flatcall the 3 bet, but that might also increase the chance of UTG just pushing a bit wider to collect the pot from all the guys that called behind.

That is a very detailed and insightful analysis of the situation (although you did miss out a few scenarios that are in my favor, such as the flop gets checked and I get a free turn card, the pot gets checked to showdown and I have the best hand or I take both player's stacks).
