3bet AA - deep maniac cold calls

Villain: 57/39 (70 hands)

My plan is to bet 3 streets for value.

Do you jam the river here with a little more than pot size left?
As played, the raise is sick, I have to call for ~70bb. (odds: ~27%)
Even though villain is probably the maniac type, I have to give credit, I think?

vs aggromonkey if you bet a smill size river is for inducing.. if he has an easy rease cc river for pot control

If he is a maniac you should consider a passive approach - check / calling and folding on a diamond turn or river. Granted, it is not pretty but your equity in this hand does not support 3 bets for value and probably not even 2 bets. You should aim to get to showdown as cheaply as possible and not worry about missing value - you do not have to protect every hand till the end when the board is terrible for you and you are either hopelessly behind or basically flipping vs his draws.
