If your opponents just show one of their two hole cards, and when you upload the HH into PT4 later, then it turns out that the PT4 reveals both of their hole cards. That is what has been going with me. Did you guys know this?

Wow, thanks for this!!! I often show just one card - for various reasons, whether to put the opponent on tilt by showing one that didnt hit, or show the one that did hit without revealing the crap kicker with it so they cannot accurately place me on a hand or widen/tighten the range. Now that you've told me this tip, I'll have to rethink this strategy!
I'm going to take a wild-ass-guess and say that if pokertracker can show the second card, then it will show both even if none are displayed during play.
Just a guess though — somebody is sure to correct me if I'm wrong.
Trackers read downloaded hand history files, so if an opponent shows you one card, you don't really need a tracker, you can just read the hand history yourself. Kind of tiresome task but worth mentioning 
Vorpal, I don't think that's the case because that would mean everyone can have every hand from every opponent in the hand histories which would be a major strategy privacy issue.

In GGPoker, can anyone show a card?
In PokerStars, you cannot show a card if you folded before the river.
If you fold on the river before showdown, then you can show the card, but in that case, the trackers have them as well, since they're in the HH.
In 888 you can show one or both cards after the showdown no matter when you folded, but even if someone showed both cards, they won't be in the hand history.
I don't know which GGPoker does — or something different even.
In GG, as long as you were dealt a hand, you can choose to reveal your hole card(s) for a couple of seconds after the showdown no matter when you folded.
