In the HUD the stats showed to me are only based at the current table. I would like to see the stats based in the all the hands (or close) that I have from the “villains”.
How do I set this?

The additional player filters are unaltered.

That is by design. Hero stats are always displayed as 'Table Stats' so you can have a better idea of how your table image may appear to any new players at the table.

Yep, that should work. Do you have Hud options -> setup hero names defined?
Is your Poker client in english language?
