At the moment I'm only being tracked on William Hill, I want to be tracked on Pokerstars and Full Tilt but I can't work out how to do that. I have an existing account and didnt download the software via poker strategy if that makes a difference?

Unfortunately, the bad news is you won't be able to have your account tracked if you didn't register through Pokerstrategy, since retracking after the fact isn't possible.
You will of course continue to be tracked at William hill, which is the good news.
More good news is that you can of pick another room to be tracked at via our participating poker rooms here:

May I remind you [even if you already know] that to do so requires you to follow the instructions for registering very carefully.

Well that sucks, ive withdrawn from WH so I wont be tracked at all now. Does it work if I unistall and reinstall pokerstars?

Unfortunately I have to be the bearer of bad news again. Uninstalling and reinstalling won't make any difference to your account, you will still be registered there with a username and account number etc.
Again, your best bet is to choose another room to play at and get it traked by registering through the link previously provided.

But I did sign up intially on Full Tilt via Pokerstrategy before the crash so my username is still the same.

Full Tilt Poker detracked all PokerStrategists so it's not just you individually that is affected.
