Do you think that because he never 3bet so far in 202 hands that we can say he has an uncapped range in this spot?

Well yes, 0 3-bet over this sample implies that he is quite tight in those spots.

Postflop: As played I think you played it fine with the exception of the bet sizes. I think you can bet bigger.

I didn't automatically assume that 2.5x meant his range was weaker so made normal assumptions that his range is strong and that 3betting UTG with AK doesn't achieve much

Generally those that open smaller in EP/MP have wider ranges. Because they open smaller your 3-bet will be smaller and thus you will get called more often as well.
