I would raise pre-flop a little bit bigger OOP. If you raise approximately 500 you can shipped most flops with QQ.

As played I would check/call the turn as well on his weak bet and fold the river, because you only beat a random bluff and I don’t think he will play that like this. His river sizing looks more on a value bet I think.

JJ and KK I would play the same way as QQ here. Maybe JJ I would call if the BTN is a nit.
AK I would 3 bet as well pre-flop and most likely check the flop and fold on a reasonable bet, because there are to many mid pocket pair in his calling range and you can’t fold those with a Cbet.

If you raise so big preflop (500), don't you miss value on weaker hands and isolate yourself against AA/KK/AK (no QQs since we have them)? You'll take the pot down most of the time but I have the impression we miss so much value from overplayed hands like AJs; AQo; 99, TT, JJ, etc... On 7$ SnGs, my 3bets even get called by low PPs and hands like KQs from fishes. I'm afraid such a large 3bet would scare them away.

That’s possible for sure, but I think you can play the hand a little bit easier post flop this way and you don’t want to give them good odds to play the hand in position. If I was on the button I would 3bet a lot smaller in a spot like this.
