Difficult to say. If vpip and pfr are accurate after 100 hands, bb fold vs sb steal should be accurate after aroud 1k hands. Depends of course if you play 6max or full ring. Those other situations happen also so rarely that I think you need around 1k hands to get some kind of idea.
