I have been playing without a hud and just observing players and taking notes and its been working before I got this Pokertracker trial. My plan is to transition to live poker at my local casino when I feel ready so Idk if I want to get too used to looking at stats

If you don't like having so many stats in your HUD, cut it down to the bare basics.
There is a popup available if you want the rest.

This is my cash game HUD:

Wow - I believe Poker Tracker and Hold'Em Manager have been owned by same people for a number of years now, but didn't realize just how close the 2 products have become. The HUD editor looks almost exactly the same (not sure HM3 has "Positional Pop-ups").

I would suggest anyone starting out with a HUD keep it as simple as possible... "Villain's name | # of hands | VPIP | PFR".

When you get really used to using these, then you can slowly add in a few more basic stats - but go slow and get used to them.

Personally I like to keep labels in, but many people don't like them taking up space.
