Yes, you can make Baklava gluten-free.

Yes, this is what I did in the first out of two burgers, which were the ones shown in the photos. The pitas have little precut slices for pockets, so my original plan was to cut the pita up at that point and use it as two halves of bread, like with regular burger buns. I changed my mind when I unpacked them and felt that they were too slim, and too difficult to cut apart. I expected that they would get too soggy from the sauce.
As I mentioned, though, it turned out that by using two pitas, I had way too much bread in relation to the meat, of which I had too little in the first place. Also, the pitas easily fell apart because they still had the pocket in the middle. So I switched back to my original idea of cutting the pita up to make two halves for the second burger that is not shown, and it worked much better.
I still have several ideas for burger creations that would have used pita bread for buns, but after seeing how this version turned out, I think I will just use regular burger buns for all of them.
Just as I was about to start typing this post, I have received news that the grindette has returned home safely from today's live meetup. ![]()
We did not do any formal Troll Challenges this time, though I had (vague) ideas for several, but we decided to just let things flow today and ended up doing none of them. In fact, we didn't even know yet where we would go for lunch when Prim hopped into my car.
It was quite a stressful start... let's see, I first had to somehow yield to an ambulance behind me as I was standing at a traffic light with other cars on all sides of me, then the street where I was supposed to pick up Primrose was closed due to construction, then my GPS sent me around on several loops for about 15 minutes, which all ended up leading back to that closed street... then we arrived home after all and I saw that a camera I ordered on eBay from a private seller (i.e. no liabilities) arrived damaged and unusable, undoubtedly leading to uncomfortable discussions over the weekend and possibly beyond... then we got to the Chinese restaurant we agreed on and found the parking lot crammed, leading to a discussion with a local on where to park... then the restaurant was unsurprisingly packed too and there were no tables near the buffet available, then it turned out that our soup of choice was used up... and finally, another patron made a comment about the calories on the appetizer plate I put together at that buffet, which I considered rude...
In the end, though, our meetup was enjoyable, like all of them.
I also made some proper long drinks to welcome the warmer seasons (the Blue Gin Kinley, introduced here in an old post on my blog). No formal Troll Challenges, as I said, but congrats to Prim on her first ever outright 1st place in a Mario Kart Wii race!
We are already planning our next meetups, where the challenges should return.
Troll Trivia solution coming up next...

Solution:
2) bingo

This is the original winning bingo card from back then, which I guess could be considered the start of my gambling career, in a way.
It has been kept around to this day in an old photo album, where I recently stumbled upon it.
There was an entertainment show for the guests at that vacation club every evening, featuring music and dancing, including a certain song that may be the subject of a future Troll Trivia question. Another feature after that one was the bingo night, which always gave out three prizes. After following it for a few nights, I finally decided to get a card myself... and immediately won both the 1st and 2nd prize.
Even back then, my ability to luckbox out of nowhere was not to be underestimated.
What were the prizes? I don't remember the 3rd one, which I didn't win, but 1st prize was a bottle of champagne and 2nd prize was a cocktail - how do you like that, another one of my current habits that gets documented on this forum having an early start in that very same night.
In fact, this may have been the moment when I first learned what a cocktail was.
The champagne obviously went to my parents, and I naturally had a non-alcoholic cocktail made for me. I don't know what was in it, and I wasn't being told, but I remember finding it quite tasty. All I know is that it was clearly mostly based on orange juice. Maybe it had some grenadine in it.
Here's almost seven year old Harrier once again, enjoying his "mocktail". Or rather, here he is being distracted, and possibly a little disturbed, by the camera pointing at him as he is trying to enjoy his mocktail - and first ever gambling winnings, most likely:

Ooooh, I'm on a heater! In 1967 our family took a train from Vancouver to Montreal.
It was a fantastic trip for a 14-yr old. I met a young guy β mid 20s on that trip who taught me how to play chess. I knew the basics, but he taught me how to actually play the game. But that has nothing to do with bingo. In the evenings, in the dining car, there was bingo. My brothers and I went there each night to play, and won all sorts of things β ashtrays, boxes of matches, and various other CN promotional items.
Recipe Raiders - Prim presents: three problems, one solution!
As you guys know, on 6 days a week, I follow a healthy diet with natural foods, no sugar, no additives, clean eating: just fresh natural and home cooked foods! But recently, I have been confronted with three problems:
1) Always the same boring stuff for brekkie ![]()
2) Cravings: Craving sweets but itΒ΄s not cheat day yet!!! :rage::f_o:
3) Those apples in the basket are definitely MUSSGO!!!!!!! ![]()
The solution: Fake it till you make it (to the next cheat day)!
Small apple cakes Paleo style!
No sugar, only healthy ingredients ,easy recipe.
3 eggs
3 table spoons of coconut oil (I took a bit less)
3 table spoons of coconut milk
3 table spoons of coconut flour
1 tea spoon of honey or 1 table spoon of Erythritol or some drops of liquid Stevia
2 big green apples (I took four red MUSSGO-apples)
Some cinnamon
Heat some coconut oil in the pan, meanwhile cut the apples in slices, remove the core and dunk the apple slices in the dough. Put them in the hot coconut oil and bake them for about 3 minutes each side. VoilΓ‘!
TrollΒ΄s verdict: Good! No highlight, but not too bad.

Three stars out of five. For me, too much coconut-stuff.
I may try these next time with almond-flour and almond-milk probably....
Looks lovely.
Not the kind of meal for me, because apples are one of those things I completely avoid, but it does look good, and I'm all in favor of finding ways to use up mussgoes.
Oh, and guess what? This thread was not originally conceived as a cooking blog, we plan to actually play some poker again soon. ![]()
We have taken a longer break from our poker challenges, partially because of Prim's sporting and SNG grinding schedules, but we are ready to restart next week.
At least the HORSE Race should be back already, and we are also on the lookout for new challenges.
The cooking will still continue, of course. ![]()
Let us take a moment, though, to see where we stand so far this year:
01. 01/08/2023 HORSE Race
Won by Prim
02. 01/15/2023 HORSE Race
Won by Harrier
03. 01/22/2023 HORSE Race
Won by Prim
01/30/2023 Live Challenge (Primrose Only): Dancing Your Troubles Away
Prim passed
03/03/2023 Live Challenge (Versus): Tetris... With Your Feet
Won by Harrier
04. 03/05/2023 HORSE Race
Won by Harrier
So far, we are completely even in our poker challenges, with me scoring an additional win in one competitive Live Challenge.
Everything is still up for grabs in 2023!
Who will you be rooting for?
Troll Trivia of the Week
Young Primrose (aged about 7 or 8) was in the car with her father once to pick up her mother from work. In there, he was reaming Prim out for her rude behavior, which was...
1) burping
2) farting
3) picking her nose
Just sayin'... I feel like the questions about you tend to be a lot grosser than the ones about me, Prim.
At least for now.
Then again, your cooking recipes tend to be healthier than mine, even though you made a dessert today.

Well I guess I did a lot of gross and nonsens things as a child. ![]()
And YES, I DO eat and cook healthy meals - except on cheat days.

All part of being a child, I suppose... and being a Troll.

We don't have it very far from our previous stop - we're going right across the waves to the island of Cyprus. ![]()

I was spontaneously inspired for that one last weekend, while collecting ideas for a completely different version that we shall see at a later point.
We will use some halloumi, of course.

I think some people even make vegetarian burgers with halloumi instead of meat. We, however, will use some meat. I was inspired by this recipe for sheftalia - uncased lamb and pork sausages from Cyprus.
I was taking it a bit easier, though, because I was only making burger patties in the style. So I simply got some ground pork and mixed some chopped onions and parsley in. The amounts in the recipe seemed a little large... a cup of onions for 2.5 pounds of meat? I simply cut up an onion and played it by ear, this is what's going into my patties (400 g of meat):

How do you fry halloumi anyway? I have never done it, nor do I remember ever eating halloumi anywhere (though I might have). Let's play it by ear again - I decided to cut up the lump once in the middle, it seemed right.

I think they turned out well. ![]()

So did the patties. we will start with one of them to build our burger.

Then the halloumi...

I added some olives, some additional parsley, and some tzatziki (prepared with some leftover yogurt and the seasoning I once got from Primrose).

Our Cypriot burger is ready:

Excellent stuff!
The halloumi was more dominant than I expected, but it was a good fit. It helped that the cooking went just about perfectly, as far as I'm concerned, so all ingredients turned out very well.
Those burgers are very similar to the Greek ones I made right in the beginning. I only used fried halloumi instead of uncooked feta, parsley instead of onions, a little less olives, and I mixed the pork with fresh parsley and onions instead of store-bought gyro seasoning.
Both of them were great... but I think the Cypriot one just wins. ![]()

Primrose on Skype today:
I'm going to make a sugar-free pseudo-cake this weekend - using your nuts!
What nefarious deeds does the grindette have in mind? Should I wear a cup this weekend? Is this a cake we would want to eat? Do we even want to find out? ![]()
We probably will, on Recipe Raiders. And don't worry, this is about the walnuts from my backyard that I gave to her on her last visit.
It is back: Our HORSE RACE!!!!

Harrier and I are continuing our HORSE race Troll Challenge! As already announced, itΒ΄s now the FRIDAY HORSE race, instead of Sunday HORSE race. The challenge is simple: last longer with one Buy-in.
And how did the Trolls do? We will find out ...... Harrier is going to post the results soon.
